Sabor

Sabor at 35-37 Heddon Street in Mayfair W1 is Nieves Barragán Mohacho's celebrated Spanish restaurant — a one Michelin star journey through Spain's culinary heritage. Nieves worked at Barrafina for a decade before opening Sabor in 2018 with GM Josè Etura. The restaurant is split across two floors: the ground floor counter for spontaneous tapas (croquetas, tortilla, cured meats), and the first floor El Asador for the formal Castilian wood-fired menu centred on the suckling pig that must be pre-ordered. Hot Dinners calls Sabor "a restaurant everyone wants to try, and once they've been are immediately plotting a return." The Infatuation: "luscious seafood rice, tender lamb sweetbreads, and elegant small plates." Time Out includes it in the best restaurants in London. In 2025 Nieves opened Legado in Shoreditch, praised as possibly her greatest opening yet.
