The kitchen works to a grid: pick a protein — chicken, beef, roast pork, king prawn, shrimp — then pick a sauce, and the same treatments repeat down each section, through black bean, Szechuan, black pepper, oyster, plum, lemon, and ginger and spring onion. What lifts it is roast duck getting a full section of its own, fourteen dishes deep, including orange sauce, plum, and cashew nuts in yellow bean. Kung po and satay are pulled out as separate headings rather than buried, satay covering skewers as well as the usual stir-fries, and a bean curd section runs the same sauce list for anyone skipping meat. Starters lean hard on the salt, pepper and garlic treatment — squid, chicken wings, king prawn, spare ribs — with ribs also offered in barbecue, Szechuan, Peking, Thai and sweet-and-sour. Foo young is doubled up, each version also available as an omelette. Crispy aromatic duck comes by the quarter, half or whole, and set menus scale from one person up to six.
