Lalibela is named for the extraordinary 11th-century rock-hewn churches of northern Ethiopia, carved directly into mountain bedrock in the Amhara Region — a UNESCO World Heritage Site and one of the great architectural achievements of medieval Africa, a pilgrimage destination for Ethiopian Orthodox Christians. The restaurant serves traditional Ethiopian food: injera flatbread, doro wat (chicken stewed with berbere spice and hard-boiled egg), tibs (pan-fried spiced meat), misir (spiced red lentils), gomen (collard greens) and the traditional Ethiopian coffee ceremony, one of the most elaborate coffee rituals in the world.
