Biryani is the section to read first. Twenty-two of them, and five are made with noodles instead of rice — chicken, lamb, prawn, king prawn and duck — while others are labelled Persian, Malayan or Hyderabadi, and one uses ponir. That willingness to name and vary carries through a very large menu. Fourteen traditional curry styles are crossed with fourteen proteins, among them ayer fish, ponir, keema, tandoori duck and tandoori king prawn, producing close to 200 permutations before the specialities even begin. The house list adds another seventy-odd under its own names: Armania, Exotica, Jafrani, Razshi, Badshi, Nowabi, Australiana and a tawa rezela. Chef's specialities bring Korai Khybari, Hyderabadi, makhani and a chaat treatment across tandoori duck, fish and king prawn. Baltis run fifteen deep, including ayer fish and tandoori duck versions. Starters are equally broad, with mach biran, kofta kebab and stuffed peppers in three fillings.
