YO Sushi

YO! occupies the first floor at the Princes Street end of what is one of the most heavily visited retail strips in Scotland. The conveyor-belt format — dishes colour-coded by price and circling a central prep area — is the same across the national chain, but the Princes Street setting puts the restaurant directly above one of Edinburgh's busiest pedestrian routes, with the castle visible to the south and the Scott Monument a short distance along the street.

The menu covers the full YO! range: nigiri and maki in standard and premium grades, chicken katsu curry, edamame, gyoza, miso soup and hot plates including teriyaki and rice bowls. Dishes rotate on the belt and can also be ordered to the table. The restaurant offers a particularly useful lunch position for shoppers working through the Princes Street stores or visiting the Scottish National Gallery on the Mound. Vegetarian, vegan and gluten-free options are clearly marked throughout the menu.

The restaurant trades through the day and into the evening seven days a week. Delivery available through Uber Eats for those staying in the New Town or Old Town.
