Vegetarian dishes outnumber everything else, which is not how most Chinese takeaways are built. Gourmet Vegetarian Dishes runs mock chicken, mock duck and mock king prawn alongside tofu, bamboo shoots and water chestnuts, stir-fried broccoli and bean sprouts, and puts them through the same twenty-five-sauce list as everything else. That list is the spine of the whole thing: sweet and sour Hong Kong style, kung po, szechuan, plum, OK, lemon, orange, peking, chop suey, satay, yellow bean, salt and chilli and the rest, applied identically across a dozen protein sections. Squid and mussels each get a full section, which is uncommon. Elsewhere there is a Thai curry row in seven proteins, vermicelli and ho fun in a dozen versions, and Philippine banana and apple rolls tucked into the starters beside crispy aromatic duck and lamb.
