Eleven kormas, four of them led by fruit — mango, peach, banana and pineapple in Kashmiri style — with Pistachio, Mughlai, Parsee, Mirchi and Ceylonese making up most of the rest. Two more are listed plain, one specified without nuts and one without fruit, which is more useful menu-writing than most kitchens bother with. Those same fruit variations reappear among the popular curries. Calzones are filled with curry rather than pizza toppings — chasni, dansak, pathia, korma, tikka masala or south Indian garlic chicken. A western section keeps sirloin, scampi, Chicken Maryland and chicken in white wine sauce.
