Tucked into a wood-panelled basement below Queensgate in the heart of Inverness, George's is one of the Highlands' more distinctive dining rooms — a place where South Indian and Thai cooking sit comfortably side by side. Head chef George trained at the Holiday Inn in Bangalore and Goa before eight years as sous-chef on an Italian cruise line, and the curriculum shows: his Masala Dosa is the dish reviewers keep coming back for, a crisp, lacy crêpe filled with spiced potato and served with sambar and chutneys. On the Thai side, the Pad Thai noodles and the incendiary Chicken on Fire draw loyalists in equal measure. Channa Masala rounds out a menu of chickpea and lentil dishes that make this a rare genuinely vegetarian-friendly spot in the city centre. Portions are generous and prices are modest enough to make it an easy local habit.
