Brat at 4 Redchurch Street in Shoreditch EC1 is chef Tomos Parry's Michelin-starred restaurant, opened in 2019. Brat is an old English word for turbot — the large, expensive flatfish that is the menu's centrepiece and always cooked whole over wood. Hardens 2025 confirms it as "as assured and thrilling as ever." Parry's cooking draws on the wood-fire tradition of the Basque country and applies it to Welsh and British ingredients: whole turbot over fire, Anglesey lobster, Hereford beef from the grill, Brecon lamb. The wine list is almost entirely natural and biodynamic. Brat won a Michelin star in 2020, its first full year. Mountain in Soho is Parry's follow-up restaurant. Redchurch Street in Shoreditch is at the heart of east London's creative and restaurant scene.
