About Cav
Câv is a darkly seductive listening bar and kitchen that opened in March 2025 in the railway arches of Paradise Row in Bethnal Green, immediately establishing itself as one of the most exciting new openings on what has long been one of East London's best stretches of independent dining and drinking. The concept comes from Chris Tanner -- co-founder of Dram Bar in Soho, which landed on the 50 Best Bars list within 18 months of opening -- and Edwin Frost of Half Cut Market and Oranj. Its name translates as "cave" in Spanish, a reference to its dome-like brick arch interior and the Spanish and Portuguese culinary traditions that inspire the kitchen. David Ellis in The Standard praised the "cool vibe, warm, unceremonious service, beautiful food and fair prices."
The kitchen runs as a rotating residency, currently led by Mallorcan chef Elies Salvà Ruiz de Villegas (ex-Barrafina, Sessions Arts Club, Western's Laundry). His Spanish menu features gildas, croquetas, bravas, calamar a la bruta, tortillas and more adventurous specials including The Octodog and fried chicken wings in chorizo spices. The cocktail list showcases Plum Manhattans, Picantes and Tangerine Highballs. A top-quality sound system and vinyl library line one wall; DJs take over later in the evening. Hardens listed.
