The numbered Cantonese backbone is all present — chop sueys, foo yungs, chow meins, sweet and sour in batter or Cantonese style — but the section that actually distinguishes the kitchen is the one marked Specially Introduced. Salt and pepper runs across crispy beef, chicken, king prawn, pork, squid, spare ribs and chicken wings; alongside it sit Tai Pang and Lang Jiang treatments of chicken, beef and king prawn, gyoza with sweet chilli dip, crispy seaweed, prawn toast and quarter crispy duck. Two further mini-grids reinforce the point: Honey Spicy and Hot Garlic and Chilli each cover chicken, beef, king prawn and squid, leaving squid unusually well represented for a takeaway this size. Roast duck gets six dishes of its own, including plum sauce and lemon versions, and the vegetarian list stretches to fifteen — satay mixed veg, kung po mixed veg, curried mushrooms with rice. Set dinners are lettered A to D and sized for two, three or four.
