Mutton, not lamb, is the meat carried through this menu — mutton biryani, tikka mutton massala, tikka mutton on the naan kebab and bhuna mutton on puri. Shatkora and chotpoti among the chef's suggestions point the same way, towards Sylheti cooking rather than the generic high-street list, as do Badami, Karala, Jal Merchi and okra. The house range is where the kitchen puts its name to things: twenty-two dishes carry the Raj prefix, including Raj Bodhu, Raj Olan, Raj Zalzul, Raj Habibi, Raj Moza, Raj Chola and a Goan vindaloo, listed quite separately from the traditional curries. Vegetarian cooking gets its own dedicated section rather than being pushed into sides — aubergine with green capsicum, cabbage and potato, cauliflower in yoghurt, Calcutta potatoes and paneer butter massala. Rice runs unusually deep too, with coconut, lemon, tomato, cashew and tandoori keema pilau all listed.
