Organised by sauce rather than by protein, this menu turns into a grid roughly thirty rows wide: pick XO, Mongolian, Taiwan satay, OK sauce, Peking, Shanghai, Kung Po, Szechuan or honey black pepper, then pick chicken, beef, char siu, duck, king prawn or house special. That structure makes the unusual sauces easy to spot, and the XO and Mongolian sections in particular are rare on a British Chinese list. Appetisers lean hard on chilli salt and pepper, applied to king prawn, shredded chicken and beef, chicken wings, mushroom stalks and even chips. What marks it out as a North East shop is the extras list, thirty-odd lines of gravy, curry sauce and chips in every combination, including curry fried rice and chips, gravy with soft thick noodles, and battered curry chicken rice pockets. Thai curry and tom yum have found their way in, and the vegetarian section is properly worked out, with bean curd in Szechuan sauce and mixed vegetables in Peking or curry sauce.
