Pork is the centre of gravity on this Filipino menu, and it is treated a dozen different ways: lechon kawali and crispy pata for crackling, sisig and chicharon bulaklak for the offcuts, sinigang na baboy for sourness, inihaw na liempo from the grill, then adobo, barbecue skewers, lumpia and silog. Seafood is nearly as deep, with inihaw na pusit, palabok, camaron rabosado, calamares, salt and pepper king prawns, and a sinigang built on salmon rather than the usual pork. Beef turns to the celebratory dishes, with kare-kare in peanut sauce, bulalo, bone marrow, kaldereta and a Beef Pares Overload. Vegetarians get more than an afterthought, with pancit in both bihon and canton versions, chop suey and vegetable lumpia.
